Recipe: Twice-baked Potatoes with Maple Bacon, Stilton, and Caramelized Onion

You'll need:

Bake the potatoes (microwaving is OK). Halve the potatoes lengthwise and with a spoon, scoop the insides of the potatoes into a mixing bowl, reserving the skins. Dice the bacon into 3/8" slices, render them crispy in a small sauce pot. Drain bacon bits and caramelize onions in reserved fat. With a fork, mash potato insides and combine with Stilton cheese. Add bacon, onion and Miracle Whip and stir until thoroughly combined. Preheat broiler. Spoon the potato mixture back into potato skins, placing finished product on sturdy baking sheet. Sprinkle potato halves with paprika (will aid in browning). Place baking sheet under broiler and broil until lightly browned. Serve immediately.
