Recipe: Citizen Cajun Salsa Chicken with Cheese

You'll need:
- 4 boneless, skinless chicken breasts cut into bite size pieces
- 2/3 C. of (medium) Citizen Cajun Salsa (Use full cup for more flavor)
- 2 T. olive oil
- 1½ cups of grated cheese (cheddar, monterrey jack or four cheese blend)
- Salt and pepper (optional)
Heat olive oil in skillet or wok over medium high heat. Dice chicken into bite-sized pieces and brown in oil. Drain off excess liquid from chicken in strainer or collander. Return chicken pieces to pan and cook for another minute. Add Citizen Cajun Salsa and stir-fry for 1-2 minutes or until chicken is cooked through. Add cheese and stir-fry until cheese is melted and coating chicken. Season with salt and pepper to taste and serve immediately.
