Recipe: Citizen Cajun Stuffed Pork Roast

You'll need:
- 3 lb. Pork loin roast, butterflied and pounded to even thickness
- 1 lb. Sage flavored pork sausage
- 4 slices of sandwich bread, torn into small pieces
- ¾ C. Citizen Cajun Salsa
- 1 large egg
- Salt and pepper to taste
- 6 lengths of butcher's twine
Pre-heat oven to 375 degrees. Season prepared roast inside and out with salt and pepper. Combine sausage, bread, salsa and egg thoroughly in mixing bowl. Place mixture in center of roast, fold sides of roast and tie with butcher's twine to form a roll. Roast in oven until internal temperature reaches 150 degrees. Remove from oven, tent under foil and allow to rest 20 minutes before slicing. Serve with additional salsa on the side.
